I wonder how it tastes? Maybe a 3 cheese grilled cheese sandwich cooked in bacon fat with Canada Goose foie gras with extra butter.

Wild goose meat is the texture of steak and has to be cooked like venison because there is virtually no fat.

That sounds good. I wonder why you don't hear much about them. I watch a lot of cooking shows and have never heard it mentioned.

Yep, that's how I know wild goose meat has the texture of steak. You should really marinade it and don't over-cook it or it will be like chewing leather. Like I said there is virtually no fat, it's all muscle.

Farm raised goose, the kind you can buy in a butcher shop, is not nearly as muscular and has more fat. The first time we had that was a Thanksgiving years ago. Even though the bird is the size of a turkey it does not have the meat content and much of it is just an empty (full when the bird was alive
) cavity.

It is flavorful and not bad but I was disappointed in the amount of meat so I have not bought any since, and the wild goose was something my nephew gave me after a successful hunting trip.

Back to what I think is the meaning of your original post. NH DES has a pamphlet from the USDA on controlling Canada Geese. Maybe there is something there that will help. Good luck

Let's see. I have tried mylar, owls, foxes, floating geese, sling shots (not to hit but to scare), air horn, dogs, a string of flags, which they figure out how to get under or over. If I had a little bit of waterfront, I would put up a fence that would be too tall for them, but we have so much, I don't want to run a fence all the way. This year (we haven't hooked up yet, but are going to, they are ready to go) we will try motion detectors which spray them with water. Again, because we have a lot of frontage, I don't know if they will figure out to go around them. Each of these things work for a while but they are persistent.
